Product Details

Matcha “Matsukaze” offers the authentic flavor of matcha while keeping bitterness and astringency mild, making it easy to enjoy. It’s also ideal for cooking and baking, allowing the true taste of matcha to shine in your recipes.

How to Prepare

  • Warm the tea bowl with hot water.
  • Soften the bamboo whisk (chasen) by warming it with hot water.
  • Place 1.5 g of matcha (1.5 scoops with a chashaku or slightly heaped 1 teaspoon) into the bowl.
  • Sifting the matcha through a fine sieve helps prevent clumps and makes whisking easier.

Tips:

  • If you don’t have a traditional matcha bowl, you can use a café au lait cup or a small bowl.
  • Make sure the bowl is dry before adding matcha; any remaining water can cause the powder to clump.

2. Add hot water

  • Pour about 70 ml of water cooled to around 80 °C (176 °F) into the bowl with the matcha.

Tips:

  • Pour a small amount first and gently mix with the whisk to create a paste before adding the rest of the water; this helps prevent clumps.
  • Moving boiling water between containers once lowers its temperature by roughly 8–10 °C, which can help achieve the ideal water temperature.

3. Whisk the matcha

  • Using the bamboo whisk, quickly mix in an “M” motion (up and down) for about 15 seconds.
  • Once a nice foam forms, adjust the bubbles with the whisk tip, and your matcha is ready.

Tips:

  • Hold the bowl firmly and use your wrist to whisk quickly for the best foam.

Storage

Before opening:

  • Refrigeration or freezing before opening helps maintain freshness.
  • However, cold matcha absorbs moisture quickly and can degrade rapidly, so always allow it to return to room temperature before opening.

After opening:

  • Freshness is crucial. Store in a cool, dark place and consume quickly.
  • If storing for medium-to-long periods, sealing tightly and refrigerating can help, but frequent opening increases the risk of absorbing moisture or odors.
  • For optimal use, purchase an amount you can finish quickly and store at room temperature.

  • During storage, the powder can settle, also causing clumps.
