A finely ground matcha with a beautiful fresh green color, offering a balanced flavor with sweetness, bitterness, and a mild astringency. Made from the first flush of tea leaves, it’s ideal for both tea ceremonies and everyday enjoyment.
Brewing Instructions
To prepare usucha (thin matcha):
-
Sift 2g of Tsuru no Mukashi into a tea bowl.
-
Add 4-5 teaspoons of water (10 ml) and whisk with a chasen (bamboo whisk) until smooth to reduce bitterness and create a creamy texture.
-
Add 50 ml of hot water (around 80°C) and whisk for 30-50 seconds.
-
Serve with sweets.
Why 80°C Water Is Best
Water at 80°C prevents over-extraction of bitter catechins, ensuring a harmonious balance of flavor and aroma. The right temperature enhances the matcha’s natural sweetness and umami.
About the Tea
"Tsuru no Mukashi" is made from premium Kyoto Uji tencha, carefully grown with long shading periods for a richer, more refined taste. The tea is harvested only once a year, ensuring optimal quality. This matcha delivers a beautifully balanced taste with umami, bitterness, and astringency.
