A seasonal assortment of three fried rice‑cracker flavors inspired by summer nights:
Yuzu Pepper, Sado Deep‑Sea Salt, and Aged Soy Sauce.

Sakurado uses contract‑grown Niigata rice varieties Watabōshi and Koganemochi, cultivated with minimal chemical fertilizers (less than half the standard), certified as Niigata Specially Cultivated Rice. Only first‑grade rice is used—no broken or damaged grains.
Rice harvested at home is stored in a dedicated low‑temperature warehouse and milled only right before use. This prevents oxidation and preserves freshness, allowing the crackers to be made from rice at its peak flavor. Rice begins to lose quality within about two weeks after milling, which is why Sakurado insists on milling in‑house.
Whole rice grains are steamed and pounded with a traditional wooden mallet. This reduces air bubbles in the dough, creating a uniform, firm mochi base. Mixer‑made dough contains more air and cannot achieve the same texture. This pounding method brings out the natural sweetness and aroma of the rice when baked. It’s a level of craftsmanship impossible in mass production—the quality of the dough is the secret to great flavor.
